I’ve been dreaming about this recipe for Chocolate Cream Cheese Pound Cake for over a week, so when I went shopping Sunday afternoon I picked up the ingredients and made it for dessert. This is the first official baking recipe I’ve used my mixer for and it turned out beautifully.
Just putting in the first three ingredients (which includes three cups of sugar) gave me anxiety. You see, the last mixer I used to mix butter and sugar together I broke, so add 8 oz of cream cheese and there was some hesitation. Thankfully, it worked like a dream. My mixer didn’t even grunt in frustration at having to work so hard. Yay!
The recipe simply says grease or spray a 10-inch Bundt pan. Weelll… Here is a video on how to properly grease it. In hindsight, a little research and preparation might have done me better, but this is my first bundt, yo. When baking, I learn as I go, which is good for you because you can learn from my mistakes. :o)
I was a little worried about the cake sticking, since I just greased it with cooking spray, but it turned out well!
I dusted it with cocoa powder since it seemed so naked without a glaze. It is soo yummy! I’ve already had a request from the hubster for Lemon cake with a glaze, so we’ll see how that goes.
P.S. Do you see the holes in the side of the cake? That’s what you get when you just spray it like I did. It didn’t effect the taste, but I’ll probably do the whole butter and flour thing next time. Also, here is the video of that scene in My Big Fat Greek Wedding where the mom can’t say “Bundt”, I know you were thinking about it. ;o)
